2 pounds salmon
1/2 cup orange juice
1/4 cup soy sauce
juice of one lemon or lime
2 cloves garlic, chopped
2 tablespoons ketchup
1 tablespoon olive oil
2 tablespoons dried parsley
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
Stir all ingredients, except the salmon, together. Marinate the salmon in the ingredients for a half hour. Cook in marinade 20-30 minutes at 400 degrees. Serve.
A tip from Lewis: “Marinade is delicious served on rice.”
