One-Pan Cheesy Chicken

On those nights when you’re too busy to think about cooking, let a one-pan dish do the work for you. Customize this cheesy spinach chicken bake to your family’s liking and use broccoli or cauliflower in place of spinach, if desired. After a quick prep, let it bake while finishing homework with the kids or wrapping up a load of laundry.

INGREDIENTS

  • 2 cups chopped rotisserie chicken
  • 10 oz frozen spinach (or broccoli or cauliflower), thawed and drained
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese
  • 1 cup Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp lemon thyme

INSTRUCTIONS

  1. Heat oven to 375°F.
  2. Cut rotisserie chicken and spinach into bite-sized pieces. In a 9″ × 13″ baking dish, mix chicken and spinach with ricotta cheese.
  3. Add mozzarella, Parmesan, Italian seasoning, garlic powder, onion powder, and lemon thyme. Mix well then bake for 30 minutes.
